Day 28: Pita Pizzas

When searching for my lunch today, I came up with this idea and had to share it! Pita Pizzas with artichoke antipasto spread, grilled chicken, and mozzarella cheese. Yum!

I toasted the pita bread under the broiler until it was crunchy on both sides, then took it out and cut it in half to make two big circles. Then I spread the insides with some artichoke antipasto spread that I got from the store, some sliced leftover grilled chicken on top of that, and piled it up with mozzarella cheese. A few minutes under the broiler to melt the cheese was all it needed, and boy was it tasty! The pita bread was crunchy and the artichoke antipasto spread gave it a nice tangy bite. You should give it a try sometime!
